Arisi Paruppu Sadam Recipe
Ingredients
Rice: 1 cup (Any type of medium-grain rice is suitable)
Toor Dal (Pigeon Pea Lentils): ½ cup
Mixed Vegetables: 1½ cups (carrots, beans, peas, spinach, and tomatoes, all freshly sourced from Harvest Fresh)
Turmeric Powder: ½ tsp
Tamarind: Small lemon-sized ball (soaked and extracted)
Salt: To taste
Ghee (Clarified Butter): 2 tbsp
For the Tempering
Mustard Seeds: 1 tsp
Cumin Seeds: 1 tsp
Curry Leaves: A sprig
Asafoetida (Hing): A pinch
For the Spice Powder (Optional)
Coriander Seeds: 1 tsp
Red Chilies: 3
Peppercorns: ½ tsp
Coconut (Grated): 2 tbsp
Preparation Method
Step 1: Cook the Rice and Dal
Wash out the rice and toor dal well.
Take the above and pressure cook with 3 cups water and a pinch of turmeric powder until well-cooked (3 whistles). Keep aside.
Step 2: Prepare the Vegetables
Carrots, beans, and spinach should all be finely chopped.
Take a pan, pour in about 1 tbsp of ghee and when hot add in the vegetables and fry till soft. Add a little bit of salt.
Step 3: Make the Spice Powder (Optional)
Toast coriander seeds, dried whole red chilies, black pepper, and grated coconut in a pan until fragrant and aromatic.
Grind the spices into a fine powder and keep aside.
Step 4: Tempering
In a separate frying pan, warm up the leftover ghee.
Sprinkle a few mustard seeds and wait until they start to splutter.
Next, toss in the cumin seeds, the curry leaves, a couple of red chilies and the stinking gum . boil them for a couple of moments.
Step 5: Combine Everything
In the subsequent container, incorporate the already prepared blend of rice and dal.
Incorporate the Indian date, the cooked vegetables, and the spice powder if desired and mix.
Combine stirring, making sure all the spices mix thoroughly.
Allow to cook for 5-7 minutes, adding water to achieve the desired thickness of the mixture.
Step 6: Serve Hot
Add a few drops of ghee on top along with some freshly cut coriander leaves for Beautify
Served along with crisp appalam (papad) or a dish of pickle makes a wholesome meal.
