Ingredients for Veg Biryani :

For the Rice:

  • 2 cups of basmati rice (washed and soaked for 30 minutes)
  • 4 cups of water
  • 2 bay leaves
  • 3-4 cloves
  • 2 green cardamoms
  • A small cinnamon stick
  • 1 tsp salt

For the Rice:

  • 1 cup Harvest Fresh carrots, diced
  • 1 cup Harvest Fresh green beans, chopped
  • 1 cup Harvest Fresh peas
  • 1 cup Harvest Fresh cauliflower florets
  • 2 medium onions, sliced thinly
  • 2 medium tomatoes, finely chopped
  • 2 green chilies, slit
  • 1 cup thick yogurt (curd)
  • 1 tsp ginger-garlic paste
  • 1/4 cup mint leaves, chopped
  • 1/4 cup coriander leaves, chopped

For the Spice Mix:

  • 2 tbsp ghee or cooking oil 
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder 
  • 2 tsp red chili powder
  • 2 tsp garam masala powder
  • 1/2 tsp coriander powder

For Garnishing:

  • A handful of fried onions
  • A few saffron strands soaked in warm milk
  • Roasted cashews and raisins

Step-by-Step Recipe :

1. Cook the Rice:

  • Take a big cooking pot: pour 4 cups of water into it and boil.
  • Add bay leaves, cloves, cardamoms, cinnamon, and salt 
  • Pour in the soaked rice and cook until 80% complete. Drain and set aside.

2. Prepare the Vegetable Mix:

  • In a big pan or kadai place a good quantity of ghee/oil for heating.
  • Then, add cumin and allow it to crackle.
  • Add onions and fry onions in this for browning.
  • Throw the ginger-garlic paste and let it cook for a minute.
  • Stir in the tomatoes and cook until it softens and breaks down.
  • Now add turmeric, red chili powder, coriander powder, and garam masala. Combine.
  • Toss in your fresh vegetables and let them cook for about 5 to 7 minutes.
  • Now pour in the yogurt with mint and coriander leaves and mix until the vegetables are all covered in that great masala.

3. Layer the Veg Biryani:

  • In a very heavy pan, put a layer of half the cooked rice.
  • Spread the vegetable mix over the rice layer.Add the second half of cooked rice on top.
  • Drizzle saffron milk over the cooked rice and garnish with fried onions, cashews, and raisins.

4. Cook the Veg Biryani:

  • Seal the pot tightly with a lid or dough outside in order to trap steam.
  • Cook on low flame for 20 minutes.
  • Switch off and let it rest for 10 minutes before serving.
